Taieddhra a modo mio (Taieddhra my way)




Nei miei quasi 25 anni di presenza al mondo ho capito gran poco della vita, anzi a dirla tutta ho parecchi problemi a relazionarmi con la stessa, ma con il tempo ho capito una cosa: ci (mi) facciamo quasi sempre più problemi di quelli che dovremmo.

Sono sempre stata una vera e propria fabbrica di seghe mentali, attiva 24 ore su 24, aperta 365 giorni l'anno. Per lungo tempo ho portato avanti ogni sorta di guerra di principio, col risultato che non ottenevo nulla e in più ero piuttosto incazzata/demoralizzata. Poi ho capito il vero segreto: bisogna saper selezionare! Sprecare energie a preoccuparsi per ogni cosa non ha senso e non porterà mai a dei buoni risultati, bisogna imprare a scegliere le battaglie che sono davvero importanti e metterci tutte le proprie energie.

Non è stato facile per me, sapete? Tuttora, a volte, mi ritrovo a rodermi il fegato prima di addormentarmi per delle vere e proprie cazzate, ma in generale vivo decisamente meglio. Pensare meno a cosa dice/ritiene la gente, accettare semplicemente il fatto che gli altri sbaglino e che la pensino diversamente, rendersi conto che al mondo non tutti diamo la stessa importanza alle stesse cose: tutto ciò mi fa sentire decisamente più tranquilla, sicura di me e serena!

Nella speranza che anche voi siate sereni e felici, seppur mezzi congelati per l'inverno imminente, vi lascio questa fantastica ricetta che mi ha davvero conquistata. Si tratta di una rivistazione della ricetta di Cristian, la taieddhra pugliese, anche se questa volta le mie modifiche sono state davvero poche. Il risultato è andato ben al di là delle aspettative: il riso con questa cottura raggiunge una consistenza fantastica, che mi ricorda vagamente quella del riso per sushi (non è un caso se ho sentito spesso dire di sostituire il riso per sushi con il riso Roma, anche se non è la stessa cosa).
Se volete un consiglio, non fatevi spaventare dal lavoraccio delle cozze e provate questo fantastico piatto, non ve ne pentirete! :)


Ingredienti (per 3 persone):

200 gr di riso Roma
1 kg di cozze
175 gr di patate
270 gr di pomodorini
mezza cipolla dorata
1 spicchio d'aglio
1 cucchiaio e mezzo di parmigiano
1 cucchiaio d'olio extra vergine d'oliva

Ho pulito le cozze dalle "incrostazioni", quindi le ho aperte aiutandomi con un coltello e ho messo i molluschi in una ciotola insieme alla loro acqua. Vi consiglio di usare i guanti per quest'operazione se non volete puzzare di cozze per ore.

Ho pelato le patate e le ho tagliate a fettine sottili, ho fatto lo stesso con i pomodorini e la cipolla sbucciata. Ho sbucciato e tritato l'aglio.

Ho preso una teglia di pirex (meglio se di coccio) e vi ho versato un cucchiaio d'olio, quindi vi ho distribuito sopra metà dei pomodorini e l'aglio tritato. Ho sciacquato il riso sotto l'acqua, quindi l'ho distribuito sui pomodorini. Ho aggiunto la seconda parte dei pomodorini e vi ho messo sopra le cozze. Ho versato l'acqua delle cozze nella teglia fino a raggiungere il livello del riso. Ho coperto con le patate e le cipolle, quindi ho distribuito uniformemente il parmigiano.

Ho infornato per un'ora a 170-180° e ho servito.


In the 25 years I've been on this earth I didn't understand very much about life, on the opposite I've many problems to relate to it, but with time I understood something: we make us much more worries than we should do.

I've always thought to much! For a long time, I conducted a sort of war of principle, obtaining no results, but rage and discouragement. Then I understood the true secret: it's necessary to learn to select! To waste energies to worry about everything has no sense and never bring to good results, it's important to learn to choose really important battles and to put all energy in them.

It wasn't easy for me, you know? Sometimes, even now, I make myslef ill, before sleeping, for out-and-out chinc, but in general I live much better. Thinking less to what people think/believe, simply accepting that other people can do mistakes and can think differently from me, realising that not all persons make much things the same way: all this things, make me feel much more relaxed, self-confident and calm!

Hoping you're feeling calm and happy too, even if frozen cause of the coming winter, I let you to this wonderful recipe, which won over me. It's an alternative version of the recipe of Cristian, the taieddhra of Puglia (typical dish of a region of South Italy), but this time the changes were few. The result was beyond the expectations: with this type of cooking, the rice reaches a fantastic consistency, which reminds me about the consistency of sushi rice (it's not a coincidence, that I heard many times, that you could sobstitute sushi rice with Roma rice, even if it's not the same thing).
If I can give you a suggestion, don't let you scare by the big work with the mussels and try this wonderful dish: you'll not regret it! :)


Ingredients (serves 3):

200g of Roma rice
1kg of mussels
175g of potatos
270g of cherry tomatos
half golden onion
1 clove of garlic
1 tablespoon and a half of grated parmesan
1 tablespoon of extra virgin olive oil

I cleaned the mussels from the incrustations, then I opened them with a knife and put them in a bowl together with their water. I suggest you to use gloves for this operation, if you prefer not to smell of mussels for hours.

I pealed the potatos and cut them in thin slices. I did the same thing with the cherry tomatos and the peeled onion. I peeled the garlic and chopped it.

I took a pirex pan (a crock pan would be better) and put a spoon of oil in it, then I spread the half of the cherry tomatos and the garlic in it. I rinsed the rice under fresh water, then I placed it on the tomato. I added the second half of the tomatos on it, then I added the mussels. I pourred the mussels' waterin the pan, until it reached the level of the rice. I covered with the potatos and the onion and sprinkled with the parmesan.

I cooked it in the oven at 170-180° for an hour and served.

Insalata con avocado e salmone affumicato (Avocado and smoked salmon salad)




Un mese e tre giorni di silenzio da parte mia: un mese pieno di corse, impegni, piatti ultra veloci ma soprattutto light. Sì perché è qualche settimana che mi sono messa a dieta, dopo lo shock subito nel provare i vestiti estivi. Sapevo di essere ingrassata, ma non così tanto!

Non vi preoccupate comunque, se c'è una che non rischia la fame sono io! Mi piace troppo mangiare e sono contraria alle diete estreme o che eliminano determinati cibi. Sono dell'idea che riproporzionare le diversi componenti e la riduzione dei fuori pasto sia il modo più sano ed efficace di dimagrire. :)

C'è anche da dire che finalmente si trovano frutta e verdura succose e saporite e fare insalate e macedonie è più un piacere che un dovere. Proprio stasera mi sono preparata un megapiattone di insalata e non ho proprio invidiato la mia famiglia che intanto si mangiava la pasta. Ho pensato di condividere con voi questa "ricetta", visto che spesso mancano le idee per un'insalata diversa dal solito.

Ingredienti (per 1-2 persone):

per l'insalata:

3 foglie di lattuga
una manciata di rucola
mezzo cetriolo
2 ravanelli
50 gr di avocado
100 gr di salmone affumicato
qualche stelo di erba cipollina

per il condimento:

il succo di mezzo limone
1 cucchiaio di salsa di soia
un pezzettino piccolo di zenzero fresco (o zenzero in polvere)
pepe
semi di sesamo bianco


Ho lavato la verdura, quindi ho mondato i ravanelli e pelato il cetriolo e l'avocado. Ho tagliato tutti gli ingredienti a fettine e ho tritato l'erba cipollina.

In una ciotolina ho mischiato il succo di limone, la salsa di soia, lo zenzero pelato e tritato, il pepe e i semi di sesamo.

Ho condito l'insalata con il condimento e ho servito.

One month and 3 days of silence by my side: a month full of runs, stasks and ultra fast dishes, but above all light. Yes, it's beacause it's a few weeks that I'm on diet, after the shocking experience of trying on the summer colthes. I knew I had put on weight, but not so much!

Don't fear, if there is someone who doesn't starve is me! I love eating too much and I'm against extreme diets or diets which remove specific foods. I think that dosing differently the various elements and reducing snacks, it's the most healthy and effective way to loose weight. :)

It's also true, that now it's easy to find juicy and tasty vegetables and fruits and preparing salads is more a plesure than a duty. This evening I prepared myself a big plate full of salad and I really didn't envy my family, which was eating pasta. I thought to share with you this "recipe", seen that often lack ideas for different salads.

Please forgive me for the bad picture took with the smartphone but it was late and a photographic set was not forseen.  ;)

Ingredients (serves 1-2):

for the salad:

3 leaves of lettuce
a handful of arugola
half cucumber
2 ravishes
50g of avocado
100g of smoked salmon
a few stem of chives

for the dressing:

the juice of half lemon
1 tablespoon of soia sauce
black pepper
sesame seeds


I washed the vegetables, then I cleaned the ravishes and peeled the cucumber and the avocado. I sliced up all the vegetables and minced the chives.

In a small bowl, I mixed the lemon juice, the soia sauce, the pepper and the sesame seeds.

I dressed the salad and served.
